Braised Fish, Saengseon Jorim
|1 lb 12 oz||Hairtail (Replaceable) 갈치 (can use other fish)|
|7 oz||Korean Radish 무|
|½ cup||Soy Sauce (regular) 왜간장|
|½ cup||Water 물|
|1½ tbs||Sugar 설탕|
|1 tbs||Gochugaru, Korean Hot Pepper Flakes 고추가루|
|1 tbs||Sesame Oil 참기름|
|2 tbs||Garlic (minced) 다진 마늘|

|1 tbs||Ginger (minced) 다진 생강 (optional)|

You can use this recipe for other fish such as mackerel.
Red Chillier Pepper, Green Chilli Pepper, Minced Ginger and Sesame Seeds are optional.

1. Prepare fish
Cut off the head and remove fins and internal organs from hairtail. Wash thoroughly under running water. Cut it into 2-3 inches (or 5-8 cm) long pieces.

2. Cut Vegetables
Wash all the vegetables. Chop green onion and slice red and green chili peppers diagonally. Cut 100g (¼) of Korean radish into thin slices (½” X ½ “X ⅛” OR 1.5cm x 1.5 cm x 0.2cm).

3. Prepare sauce
Mix ½ cup water, ½ cup soy sauce, 1 tablespoon sesame oil, 2 tablespoons minced garlic, 1 tablespoon minced ginger, 1½ tablespoons sugar, ½ tablespoons sesame seeds, 1 tablespoon red chili flakes, chopped green onions and sliced red and green chili peppers.
4. Add radish
Lay the sliced radish to cover the bottom of a sauce pan or a pot. Then, pour 8 tablespoons of the sauce evenly on top.

5. Add fish
Place a layer of hairtail over the radish layer and pour the rest of the sauce evenly on top.

Boil on medium heat with a lid for 5 min. When the sauce starts to boil, lower the heat to low and braise it for 15 min.
