Kal-guk-soo is korean style handmade noodle that is quite different from other asian noodles such as udon or chow mein. Koreans enjoy kal-guk-soo with various soup bases, made with ingredients such as chicken, seafoods, red beans etc. You can buy pre-made ones from any Korean markets. You can also make it from scratch easily if you have a bit time in your hand.

Sourcing & Selecting

You can easily make your own with flour, water, salt and vegetable oil. See the instructions below. If you would like to buy, most Korean grocery stores carry it. Some will have different flavours. (plain, pumpkin, green tea etc.) You really can't go wrong with any of the flavors. It's just up to your preference.
Use Udon noodles or other thick noodles.
How to Measure: 
1 serving is usually 150g.
Seal tightly and freeze.

This recipe is for 2 people.

Mix 4 cups of flour, 1 cup of water, 1/2 teaspoon of salt and 1/2 teaspoon of vegetable oil. Knead until the dough becomes smooth and elastic (about 10-15 min). Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 min to allow the gluten to relax.

Take out the chilled dough from the refrigerator. Clean, dry and dust the work surface with flour. Unwrap the dough and lightly dust your hands, the dough and the rolling pin with flour. Pat down with your hands to make it flat. Roll the rolling pin to make the dough as thin as possible (about 2mm). (Always roll from the center of the dough and use even pressure.)

Dust the dough with more flour. Fold the dough into thirds and cut it into 0.3cm wide strips.

(OPTIONAL) Precook noodles in boiling water and boil it for 1 min on high heat. Wash in cold water and drain.
